Quick and easy things to do with tofu.

Tofu Nuggets

Cut up a 250g block of tofu into cubes - 5 cuts along the length, 4 cuts along the width, and halve the thickness of the block. Pat dry with paper towel. Marinate for 5 minutes in half cup soy sauce and pinch of pepper. Put 2 tablespoons of flour and 1 tablespoon of sesame seeds into a plastic bag. Toss the marinated tofu into the bag, shaking to coat the cubes well. Shake off excess flour using a colander. Fill fry pan with 5mm oil. Fry cubes until golden brown. Drain on paper towels. Serve hot or cold.

Tofu with Peanut Sauce

Tofu: Halve the thickness of the block. Pat dry, rub with a pinch of salt. And pan-fry in non-stick pan with 2 tablespoons of canola oil until crusted on each side. Drain on paper towels. Arrange on a dinner plate with vegetables.

Sauce: Warm 1 tablespoon oil in a small saucepan. Fry half a chopped onion and 1 clove crushed garlic until soft. Add 1/2 tablespoon each of coriander and cummin powder followed by 1/2 cup peanut butter, 1/2 tablespoon sugar and a pinch of salt. Stir in enough water or milk to get consistency of porridge. Cook for a further minute. Pour peanut sauce over tofu and vegetables. Serve hot.

French Olive Spread

250g Blue Lotus Tofu
1 cup black olives - pitted
2 cloves garlic
1 Tbsp Virgin Olive Oil
2 Tbsp capers
2 tsp Lemon Juice
1 Tsp French Mustard
1/2 tsp each of Thyme, Rosemary and Parsley.
Ground black pepper and salt to taste.

Method: Place all the above into a food processor and blend until homogeneous and smooth. Chill and serve as a delicious healthful spread.
